Good morning, & welcome to the new Niki Nana Prayer Train II, which due to technical difficulties had to be started brand new. Everything remains the same, but someone must have wanted to give the train a fresh coat of paint, repair the tracks, & add a Hemi engine. Now I know why God gave me a sense of humor.

Peanut, check out the past Olive Grove postings. Rosie posted a recipe for the Gluten Free Pie Crust. I posted recipes for Wheat Free Coconut Pie and Wheat Free Chocolate Cake.
1½ cups white rice flour ½ cup tapioca starch flour ¼ cup potato starch flour 1 tsp xanthan gum 1 egg + water to fill a cup ½ cup cornstarch ½ lb lard – (Tenderflake) 1 tsp salt 1 tsp baking powder 1 tsp vinegar
Mix all dry ingredients. Cut lard into pieces; add to dry ingredients. Mix with pastry blender or fingers until mixture resembles coarse crumbs. Mix egg, vinegar and water in 1 cup measure. Add water to make 1 cup of egg mixture. Make a well in centre of flour mixture; pour in ¾ of the egg mixture. Mix with fork until all dry ingredients are moistened. Add more egg mixture as needed if mixture is too dry. Pastry should be very moist. Wrap in plastic wrap and chill several hours or overnight, until cold and firm. Roll pastry on rice-floured surface to desired size. Bake until golden brown at 400 F for the first 10 minutes if you are baking a pie then 350 for approximately 25 – 30 minutes.

First of all, Lori and Linda thanks so much for the recipe and where I can find them. I knew I saw them but couldn't remember where. You two are the best! My cousin will be a very happy camper when she comes to visit. Linda I'm sorry to hear about Mike though. I will keep him in my prayers.
Hummer, thanks for the update on Pam. I too was wondering what had happened. I will keep her in my prayers as well. Moon Pies? Oh boy, now you've hit on one of my favorites! Whenever I visit Lancaster County, it's always fun to listen to the tourists try to figure out what a shoo fly pie is . Wet bottom is the best!
Patty I'm so sorry to hear about Henny. I'm sure she will be missed greatly. What a terrible loss to your family.
Has anyone heard anything from the Dolphins? I think of them but they seem to have disappeared.
Keeping all of you in my thoughts and prayers today. Remembering Peter, Donna and Kathrine, Dara and Scott, Storm's family, Chad and Ryan, those mourning, those healing and those just needing a little extra help. It's going to be another muggy humid and hot one here today. Can't wait for that. Oh well, six more weeks until the first frost!

OK, I don't know how to say this as I know many of you are facing problems much bigger than mine.......
Losing Miss Henny was a harder blow than most would think but she was a special bird, not only to me but to some of the other chickens, especially her two escorts. I lost them last summer but they were special too in the way they always came to the door in the morning for Miss Henny, then brought her back to the door at the end of the day for her to come in to the shop for the night in her own special cage. This went on for years, much to the delight of me and many of my customers.
Today, I went to the store and had a large heart tag made that says MISS HENNY'S NURSERY and attached it to the gate to her own little area for her outside time. We had also been putting hens with babies in there with her so she had company to hang out with during the day. Now, it will be just for moms with babies until they are big enough to fly out and join the others.
Also today, I found at my third stop, an Azalea bush that blooms white flowers in the spring, summer and fall. It will be planted this evening after dinner right beside where she is buried (inside the nursery) so the babies will have a cute flowering bush to play under. It's special bred for full sun and will make a great additional shady area.
So, that's where I went today and I waited until I got back to post so I had something to share. I'm going to miss her, my customers will miss her.....but now she is back with her special escorts which surely were there waiting for her arrival.

Thanks Kathrine....this has been a particularly hard day today.
As I write my book, it will certainly have her true story about her and her escorts. When I was shopping for her bush today, I knew as soon as I saw the Asalea with the white flowers that that was the one.....just like when I found Banner's tree, you just know it when you see it. We planted it as the sun was setting tonight, surely the babies will be playing under it tomorrow.........
When I found AllyB, he healed a wound from all the way back to 1980 so, I know I will be subconsciously watching the babies looking for another special hen, perhaps one that Moses will notice too.
I'm done for the day, thanks bunches for the hug Kathrine. It will be hard facing her empty cage in the morning but she'll always be watching in MISS HENNY'S NURSERY....from under the white Azaleas.
