We don't have a Mom's Organic Market or a Trader Joes here. Our local grocery store has evolved into having more gluten free products. Lately I've been buying desert and muffin mixes on sale and trying them. So far I really liked the new Betty Crocker yellow cake mix. Over the years I came up with a lot of my own recipes that are better than the mixes that you buy in the stores. We also have a Health Hut that sells healthy alternatives to the regular store but I just find it easier to buy in my regular grocery store. Restaurants have become better, also. I go to the Toast And Jams restaurant for gluten free pancakes on Saturday mornings and they are excellent. I don't know which restaurant it is that has gluten free pizza crust, but I've heard that there is one. Let me know if any of you find out which one it is. People in general just seem to be so much more aware of the different diets that people have.
I came across a good recipe you may enjoy in my new Sunset.. "Greek tuna salad".
Serves 6 Time 25min.
3 cans unsalted, water packed tuna, drained, 6oz. each 1 jar(6.5oz.) marinated artichoke hearts, drained and quartered 1/2 cup pitted, halved kalamata olives 1/3 cup crumbled feta cheese 2 tbsp, minced garlic 1/2 cup sliced red onion 2 tbsp. sherry vinegar 1/4 cup extra-virgin olive oil 3/4 tsp. kosher salt 1/2 tsp. freshly ground black pepper 1/2 cup chopped flat-leaf parsley 1 head butter lettuce
Combine all ingredients except lettuce in a large bowl. Arrange a few lettuce leaves on each of 6 plates. Spoon tuna mixture on top of lettuce and serve with pita chips or warmed pita halves..

I am glad that these stores do have Gluten Free Foods for people who need them. I like pretzels and there is a good gluten free pretzel with sesame seeds on them at the Health Food Store.

Enjoying an off i got today. Its India's 61st Republic Day. Also just left with the last chapter of "Yanni in Words" which i'm reading for the second time. Every time i read it i have felt great amount of respect for Yanni for being so honest and for being such a focussed hard-worker. And not to forget the mention of a great management team and crew Yanni has had over the years. Hope to finish reading the book today.
